Kefir grains are living pets. You can’t just leave them on the counter for a week, or they will starve. However, they are hardy! Here is how to put them to sleep while you travel.
1. The “Fridge” Method
Duration: Up to 3 Weeks
Method:
- Put grains in a clean jar.
- Add fresh milk (for milk kefir) or fresh sugar water (for water kefir).
- Put a tight lid on it.
- Place in the coldest part of the fridge.
To Wake Up: Strain, discard liquid, add fresh milk/water, and ferment on the counter. The first batch might be slow.
2. The “Freezer” Method
Duration: Up to 6 Months
Method:
- Rinse grains gently with filtered water.
- Pat them dry on a paper towel.
- Place in a ziplock bag or small container.
- Cover with a pinch of dried milk powder (optional, for protection).
- Freeze.
To Wake Up: Thaw in the fridge, then place in milk. It may take 3-4 cycles to become active again.
